HERE'S WHAT YOU WILL NEED:

  • 120 g natural peanut butter
  • 10 g honey
  • 180 ml sugar free maple syrup
  • 200 g egg whites
  • 30 g Nu Harvest Chocolate Swirl Thrive Protein
  • 3 tbsp cocoa powder
  • 100g chocolate chunks (optional)
  • 1 tbsp instant coffee dissolved in 1 tbsp hot water
  • Pinch of salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda

HERE’S HOW TO MAKE IT

  1. Peel and chop sweet potato, then boil or steam until very soft. Drain and mash thoroughly until smooth and measure out 300g.
  2. Wisk the mashed sweet potato, peanut butter, honey, syrup, egg whites and coffee in a bowl until just combined.
  3. Add the cocoa powder, protein powder, baking soda + powder, and salt and gently mix again, (dont over mix because you want the brownies stay fudgy).
  4. Fold through the chocolate chunks and spread into a lined baking tin.
  5. Bake for 25–30 minutes until the edges are set and a toothpick comes out with a few moist crumbs.
  6. Let sit for at least 1 hour before slicing (These brownies taste the best after being in the fridge overnight)
