Raspberry Cheesecake Overnight Weetbix

You’re in the mood for something sweet. Maybe a little creamy, a little fruity… something like raspberry cheesecake.

It sounds like a dessert situation. And usually, it is.

But instead of writing it off as a “sometimes food,” let’s make it work for you.

Enter: Raspberry Cheesecake Overnight Weetbix from @nourishbynoa. Same dessert-style flavour, but layered into a nourishing, make-ahead breakfast that actually keeps you satisfied and energised.

We’ve got a soft, milky Weetbix base, a jammy raspberry layer that brings the perfect amount of tang, and a thick, creamy yoghurt topping that genuinely tastes like cheesecake filling. Add a drizzle of pistachio cream and a little crunch on top and suddenly your breakfast feels a bit elevated… without adding any extra effort.

The real upgrade is in that yoghurt layer. Mixing in Nu Harvest’s organic pea and rice protein blend turns it from something tasty into something that actually supports your body. HERE'S WHAT YOU WILL NEED:

For the base:

  • 2 pieces Weetbix
  • 1/3 cup Milk (any works fine!)
  • 1 tsp Pure Maple Syrup, optional, but if you like it sweeter than defs add!

For the raspberry layer:

  • 1/2 cup Raspberries, Frozen
  • 1 tsp Pure Maple Syrup, optional

For the yoghurt layer:

Toppings:

  • 1 Tbsp Pistachio Cream
  • 1 Tbsp Pistachios, Roasted, chopped

HERE'S HOW TO MAKE IT:

  1. Crush Weetbix and mix with milk and maple syrup in bowl/container until combined. Press down with the back of a spoon/fork to form the base.
  2. In a microwave-safe bowl, microwave the raspberries for 30-60 seconds, and then mash until it forms a jam-like consistency. Add maple syrup if you desire. Spread over the Weetbix base.
  3. In a separate bowl, mix yoghurt and Nu Harvest Vanilla Plant Protein until smooth and combined. Spread evenly over the raspberry layer.
  4. Add the pistachio spread to a microwave-safe bowl, and microwave for 30-40 seconds, or until slightly runny.
  5. Drizzle over the yoghurt layer and use a toothpick to create swirls (if desired).
  6. Pop in the fridge overnight (or for at least 15 mins), top with chopped pistachios when ready to eat and enjoy!
