No-Bake Mango, Macadamia & Coconut Cheesecakes

Summer is here #NHgang! Summer is the season for temptation... so why not make it a little easier on yourself with this healthy, refined sugar free and DELICIOUS summer cheesecake recipe. 

What you'll need: 

Base

  • 1 tbsp Macadamia butter
  • 1/2 cup Coconut
  • 1/3 cup chopped macadamias
  • 1 scoop THRIVE vanilla shortbread protein
  • 1/2 cup Mango
  • 2 tbsp Almond meal
  • 2 tbsp Coconut flour 
  • Pinch Sat
  • Pinch Vanilla 

White choc topping

  • 1/2 cup cacao butter
  • 1 tsp honey
  • 2 tbsp coconut butter
  • Salt 
  • Coconut and mango to serve

 

How to make it: 

  1. Blend all base ingredients besides macadamias 
  2. If the mix feels too wet, add some more flour of choice, it should be moist but not sticking to your hands excessively 
  3. Stir through the chopped macadamias
  4. Press into lined muffin tin 
  5. Place in the freezer while making the topping
  6. Melt white choc ingredients slowly in a saucepan on low heat 
  7. Pour immediately over cheesecakes ( it will burn and separate easily so make sure you do it quickly!) 
  8. Top with extra coconut and set in the freezer for 2+ hours ( store in freezer)
