You’ve just come across the ultimate Christmas treat that’s going to knock your socks off. Decadent and soft, chocolatey fudge perfect for all the peppermint lovers. Created by NZ based foodie @thislifeasjasmin, this recipe is vegan, gluten free and refined sugar free! Go on, enjoy, it’s Christmas.
HERE'S WHAT YOU'LL NEED:
- 3 tbsp EITHER NH Chocolate Swirl THRIVE plant protein or cacao (I did half and half!)
- 2 tbsp coconut oil
- 3/4 cup coconut milk (thick part from the can) or coconut cream
- 2 drops of peppermint essence/ oil
- 3 tbsp pure maple syrup
- Pinch salt
- 1 tsp vanilla
- Optional: crushed candy canes to top!
HERE'S HOW TO MAKE IT:
- Melt the coconut oil and mix with all other ingredients.
- Pour into a loaf tin or baking tray.
- Sprinkle crushed candy canes over the top.
- Pop in the freezer to set overnight!
