HERE’S WHAT YOU’LL NEED

For the oats:

  • 2 whole banana
  • 200 grams rolled oats
  • 60g Nu Harvest Chocolate Malt THRIVE Plant Protein
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 200g Greek yoghurt
  • 400 ml milk (any works fine)
  • 2 tbsp instant coffee
  • 100 ml hot water

Toppings:

  • 300 grams Greek yoghurt
  • 2 tsp instant coffee
  • 2 tbsp hot water
  • 1 tbsp cocoa powder

HERE’S HOW TO MAKE IT:

  1. Preheat oven to 190°C (170°C fan forced).
  2. Whisk instant coffee and hot water together and set aside.
  3. In an oven safe baking dish, mash bananas. Add in oats, Choc Malt Plant Protein, cocoa powder, baking powder, milk, yoghurt and coffee. Mix until well combined.
  4. Bake in the oven for 35-40 mins. Once ready, set aside to cool for 10 mins.
  5. For the topping, whisk instant coffee and hot water together. Combine in a bowl with yoghurt and mix until smooth. Spread evenly over baked oats and dust with cocoa powder.
  6. Slice into as many pieces as you desire and store in the fridge in an airtight container. Enjoy cold or microwave for 1 min to serve warm.
