HERE’S WHAT YOU’LL NEED

  • 1 egg
  • 50g protein yoghurt
  • 70ml milk of choice
  • 1/2 tbsp honey
  • 1/3 cup plain flour
  • 30g Nu Harvest Vanilla THRIVE Plant Protein (use code LAURENJ15 for $$ off)
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • Pinch of salt
  • Handful of fresh/frozen raspberries

HERE’S HOW TO MAKE IT

  1. Preheat your oven to 180°C.
  2. In a small oven safe glass container or ramekin, mix egg, milk, protein yogurt and honey until smooth.
  3. Add plain flour, Nu Harvest Vanilla THRIVE Plant Protein, baking powder, cinnamon and a pinch of salt. Stir until just combined, being careful not to over-mix.
  4. Gently press raspberries into the top, and bake for 25-30 minutes, or until a skewer inserted into the centre comes out clean.
  5. Allow to cool slightly before eating. Enjoy as is or top with extra yoghurt, peanut butter or a drizzle of maple syrup.
