Blueberry Pancake Muffins

  • 1 ripe banana

  • 1 egg

  • 3/4 cup almond milk

  • 1/4 cup olive oil

  • 1 tsp baking powder

  • 1/4 cup sugar/substitute (we used @natvialiving)

  • 3/4 cup plain flour

  • 1/4 cup NH Vanilla Pancake Batter THRIVE Protein

  • 1 punnet blueberries (fresh or frozen)


  1. Preheat the oven to 180C.

  2. Add the banana, egg, milk & oil to a blender.

  3. Blitz until well combined.

  4. Add all remaining ingredients except the blueberries.

  5. Blitz to combine.

  6. Gently stir the blueberries through with a spoon.

  7. Bake for 20-25 mins or until golden.
