
3 Healthy + High Protein Meal Prep Ideas
When it comes to meal prep, most of us are after the same three things: meals that are easy, delicious, and actually do something for your body. These 3 recipes by @mirandabrady tick all the boxes - packed with fibre, good fats, and high quality protein to keep you full and fuelled for hours! Plus, let’s be honest.. there’s nothing more satisfying than opening the fridge and knowing your meals are sorted for the week ahead.
This week’s lineup includes a creamy lemon chicken orzo that tastes like comfort in a bowl, fluffy protein traybake pancakes for grab & go breakfasts, and no bake banana caramel bites for when you want a sweet treat (but make it nourishing, of course).

Lemon Chicken Orzo
Ingredients:
- 1/2 tbs extra virgin olive oil
- 500g chicken breast
- 1/2 tsp each paprika & oregano
- 1 tbs butter
- 1-2 garlic cloves, minced
- 1 lemon
- 1 cup orzo/ risoni
- 2 cups chicken stock
- 1 tsp Dijon mustard
- 1/2 cup light cooking cream
- 2 tbsp Parmesan, grated
- 1 cup baby spinach
Method:
- Heat the olive oil in a large pan. Season chicken with paprika, oregano, salt & pepper, and cook for 5 minutes until cooked through.
- Add the butter, garlic and half sliced lemon to the pan cook for 2-3 minutes to caramelise. Remove from the pan and set aside.
- Add the orzo and toast for 2 minutes. Stir in the chicken stock, cooking cream, dijon mustard and juice of half a lemon.
- Simmer for 10-12 minutes uncovered or until the orzo is tender (stir so it doesn't stick to the bottom of the pan).
- Add the parmesan and baby spinach. Stir until cheese has melted through.
- Divide orzo and chicken between 4 bowls, garnish with fresh parsley & chilli flakes to serve.

Traybake Pancakes
Ingredients:
- 1 1/2 cups plain flour
- 1/2 cup Nu Harvest Vanilla Pancake Batter THRIVE Plant Protein
- 2 tsp baking powder
- 2 eggs
- 1 1/2 cups milk
- 2 tbsp maple syrup
- 2 tbsp melted butter
- 1 cup berries + extra to serve
- 1 cup Greek yoghurt, to serve
Method:
- Whisk the flour, Vanilla Plant Protein and baking powder together in a bowl.
- Add the eggs, milk, maple syrup and melted butter. Gently fold to combine.
- Transfer into a greased or lined baking dish and add berries or your fave toppings.
- Bake for 15-20 minutes until lightly golden.
- Divide into 4 portions, top with Greek yoghurt and extra berries to serve.

Banana Caramel Bites
Ingredients:
- 1 large banana
- 1/3 cup Nu Harvest White Choc Caramel Swirl THRIVE Plant Protein (or Caramel Biscuit Protein)
- 2 tbsp Biscoff spread, melted (or nut butter)
- 1-2 tbsp milk of choice (or yoghurt)
- 100g chocolate, melted
Method:
- Place the chocolate in a heat proof bowl and microwave in 30 seconds increments until melted, stirring in between.
- Add a tsp of melted chocolate to the base of a silicone muffin mould or lined muffin tray (makes 12 mini or 6 regular). Freeze for 15 minutes to set.
- Slice the banana into 1cm thick coins. Set aside.
- In a bowl, combine the melted Biscoff spread and White Choc Caramel Plant Protein. Gradually add the milk or yoghurt and mix well until it forms a thick but smooth consistency.
- Roll the dough into disks and place onto of the hardened chocolate. Top each with a banana coin and cover with remaining chocolate.
- Place in the freezer for 1 hour to set. Keep stored in the fridge or freezer.
