Vanilla Shortbread Energy Bites

Need a yummy snack with an epic energy boost? We've got just the thing! Our vanilla shortbread energy bites are the perfect post-workout or midday snack. They're packed full of fibre & protein, and are so deliciously sweet you won't believe it's refined sugar free, dairy free AND vegan! 

Ingredients:

  • 1/2 cup of quick oats
  • ½ cup of Vanilla Shortbread Thrive Plant Protein 
  • ½ cup almonds
  • 2 tbsp of hulled tahini
  • 1/3 rice malt syrup/maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 4-5 tbsp nut milk

How to:

  1. Add all dry ingredients into a food processor or blender and blitz. Add wet ingredients and blitz again.
  2. Shape the mixture into medium-sized balls and place in the fridge/freezer to firm up for 30mins. 

Makes: 9 balls

Leave in the fridge for up to a week.
